Chocolate Banana Brownies


I didn't plan on posting these "Chocolate Banana Brownies" but midway through 
eating a piece I thought, yep....I need to share.


They're super easy to make and bake in about 20 minutes.

While they're not a gooey brownie, they are really moist and with the chocolate chips 
being all melty....it was awesome! 

I was thinking a nice scoop of black walnut ice cream with it would be perfect.

CHOCOLATE BANANA BROWNIES

1/2 cup butter, melted
1/4 cup cocoa
1 cup sugar
1 egg
1 tsp pure vanilla extract
1 1/2 cups mashed bananas, apprx. 2 lg
1 1/4 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup bittersweet or semi-sweet chocolate chips, I use Ghirardelli 60% Cacao

Heat oven to 350*.

Melt butter in a medium bowl; whisk in cocoa. Add sugar, egg, vanilla and mashed bananas; whisk until combined. 

In a separate bowl; whisk together flour, baking powder, baking soda and salt. Add to chocolate mixture and stir until combined. Don't over mix. Stir in chips.

Pour batter into a greased 7x11 baking dish and bake 20 minutes or until knife/toothpick test comes out clean.

Caramel Apple Butterfinger Bars

Made these the other night for a small impromptu dinner party.


They're awesome. Easy and fast to make.

I ended up halfing the recipe and baking it in an 8x8. Heads up on the caramel. 
My jar of caramel sauce said it was 12oz but actually only has 8 oz of caramel in the jar.
Oh, and I actually forgot to pre-bake the oatmeal crust and they still came out perfect so..

Totally worth making.

Caramel Apple Butterfinger Bars

2 cups all-purpose flour
2 cups quick cooking oats
1 1/2 cups packed brown sugar
1 teaspoon baking soda
Pinch of salt
1 1/4 cups butter, melted
2 cups Granny Smith apples - peeled, cored and sliced VERY thin
1 jar caramel ice cream topping
1/2 cup all-purpose flour
5 regular size Butterfinger Bars, roughly chopped

Preheat oven to 350. 

Line a 9x13 pan with foil and spray well with nonstick spray.

In a large bowl, combine flour, brown sugar, quick oats, baking soda and a pinch of salt. Stir in melted butter until completely mixed in. Press 3/4 of mixture into pan and bake for 9 minutes.

Spread apple slices evenly over crust.

In a small pan, heat caramel and flour over medium heat until it starts to bubble. Remove from heat and pour over apple slices. Sprinkle Butterfinger pieces over the top, and top with remaining crust mixture, crumbling evenly over bars.


Bake for 20 minutes or until golden brown. Remove and let cool to room temperature before covering with foil and chilling completely.

Lemon Coconut Bars

These are some of the best lemon bars.


The crust is the bomb.

It's got that shortbread texture and taste which 
compliments the lemon filling perfectly.


One of my favorites for sure, and always a huge hit with everyone.

Lemon Coconut Bars

1 cup flour
1/2 cup butter, softened
1/4 cup powdered sugar
2 eggs
1 cup sugar
1/2 tsp baking powder
1/4 tsp salt
1 1/2  tsp lemon peel
2 tbsp lemon juice
1/2 cup coconut
Powered sugar for dusting, if desired

Pre-heat oven to 350 degrees.

Mix together flour, butter and powdered sugar and press into a prepared 8x8 baking dish, building up 1/2 inch edge. Bake 20 minutes.

Beat remaining ingredients, except coconut, until light and fluffy, about 3 minutes. Stir in coconut and spread on hot crust. Bake 20-25 minutes longer, just until no impression remains when lightly touched in center.

Cool, then dust with sugar if using.
